Summary

move the MIPI-DBI duplex and mode properties from the SPI host to the ili9342c panel node so the driver enters 3-wire mode
enable MIPI_DBI_SPI_3WIRE by default in the CoreS3 defconfig to build the necessary driver support

Testing

cmake -B build -S samples/subsys/display/lvgl -DBOARD=m5stack_cores3/esp32s3/procpu (fails: missing pykwalify module in container)
