Build(deps): Bump minimatch and npm (#71)

Removes [minimatch](https://github.com/isaacs/minimatch). It's no longer used after updating ancestor dependency [npm](https://github.com/npm/cli). These dependencies need to be updated together.


Removes `minimatch`

Updates `npm` from 11.7.0 to 11.10.1
