Docs: Fix Discrepancies

Updated docs/_docs/user-guide/eldritch.md to reflect the current state of the Eldritch DSL, including missing methods (agent, crypto, pivot, random), corrected signatures (file.move), and added built-in functions list. Updated docs/_docs/admin-guide/tavern.md to include missing environment variables for logging and PubSub configuration.
