chore: migrate patches of dependencies to patchable format

Description

Fixes 1010

Migrated patches of these dependencies to the patchable format:

• hbase-connectors
• phoenix
• hbase-operator-tools

I also aligned the folder hierarchy:

Before it was:
hbase/stackable/patches/phoenix and hbase/stackable/patches/hbase-operator-tools

Now it's:
hbase/phoenix and hbase/hbase-operator-tools

For hbase-connectors it was:
spark-k8s/stackable/hbase-connectors-patches

Now it's:
spark-k8s/hbase-connectors

Otherwise the new patch folders would have looked like this: hbase/stackable/patches/phoenix/stackable/patches

The image can be built and uploaded to the kind cluster with the following commands:

bake --product <product> --image-version <stackable-image-version>
kind load docker-image <image-tagged-with-the-major-version> --name=<name-of-your-test-cluster>

See the output of bake to retrieve the image tag for <image-tagged-with-the-major-version>.
