.*: Address use of deprecated graph panels

This PR replaces the use of deprecated panels when possible. fixes #7413
This does not fix table panels (i.e. here). That would need to be addressed in the parent library

• I added CHANGELOG entry for this change.
• Change is not relevant to the end user.

Changes

• Replace the use of $.panel with $.timeseriesPanel

Verification

1. Setup k8s/grafana/thanos
2. Generate dashboards

make examples

3. Manually import and check for deprecations
