[Dashboard] Feature: Update API endpoint names and add NFT balances endpoint

Notes for the reviewer

This PR makes the following changes to the insight blueprints:

• Renames "Get token transfers by wallet address" to "Get token transfers"
• Renames "Get NFT transfers by owner" to "Get NFT transfers"
• Adds a new endpoint "Get NFT balances by address" with path "/v1/nfts/balance/{ownerAddress}"

How to test

Verify the updated endpoint names and new NFT balances endpoint appear correctly in the dashboard.
