update docs for Trickster 2.0 and fixes #910
also updated all packages to latest. as a result of that, the linter complained that Zipkin has been deprecated as an OTEL exporter and will be removed completely in a few months. So I removed zipkin support from the project so that we don't carry over any deprecated features from 1.x to 2.0.
