Viridian dataset missing metadata description fields

Not sure what step this happened at (or if it's a problem with the pipeline), but they're not stored.

Note to close this we need to update the documentation so that the subset we're using includes these fields. There's also a warning block in the alignments_analysis.md file to remove.
