feat: update OpenAPI schema and derived changes

Change Summary

Updated to latest OpenAPI schema:

• add hybrid search result to openapi spec typesense-api-spec#95
• Union. typesense-api-spec#96
• feat: add getCollectionsParameters and missing metadata fields to CollectionSchema and CollectionUpdateSchema typesense-api-spec#97

Implemented necessary changes for CollectionsInterface.Create.

This is technically a breaking change, but brings this API in line with existing other APIs.

In short:

• allows storing and retrieving of collection metadata
• adds support for pagination as well as exclude_fields when listing collections.

Actually, we have a bunch of breaking changes that are targeting upcoming v30 release, so I will wait for that because I don't want to do 2 major release bumps.
