Updated hey-api as the client-fetch is bundled as part of @hey-api/openapi-ts in newer versions

• Updates Vite to latest version
• Removes @hey-api/client-fetch as its bundled part of @hey-api/openapi-ts
• Updated HeyAPI config to generate the same style of files as before

Starting with v0.73.0, this package is bundled directly inside @hey-api/openapi-ts.

Hi @warrenbuckley
Great initiative! Would you consider bumping hey-api in the backoffice as well, so the backoffice and template are running the same version? I think that gives the best experience to the developer.

I can do a PR for that as well, but I need to find time why the C# side API Controller is not showing up in Swagger atm 😕
