I reviewed this PR as a non-native Greek speaker. All the translated strings look good to me after translating them back to English and comparing them. 🥳
This PR is just missing a changeset, which is important to publish a new version of Starlight which includes the new Greek UI strings. Would you please be so kind and add a Changeset. You can take a look at the first file of this PR as an example of how it should look like: https://github.com/withastro/starlight/pull/3325/changes (You can basically copy the wording, e.g.: Adds Greek language support)
