Include open upstream PR crankyoldgit#2144 to make IR learning compatible with IDF 5.x.
Enhance original PR with the required ESP hal sources of the espressif arduino-esp32 library, since we no longer use PIO and arduino libraries.
Tested with IDF 5.3 and ESP32-S3 on UC dock 3.
