feat: Add log_retention_days as a configuration value

Log retention days configuration value can now be set instead of previously setting error-prone --log-retention-days.

Standard development

• Update / add chart templates, values, and NOTES.txt as needed

• Verify the chart installs and upgrades cleanly on a test cluster
