Pull Request Overview
This PR prepares Event Hubs SDK components for release by updating their changelog files with release dates and cleaning up unreleased sections.
- Updates version 0.2.0 from "Unreleased" to released on 2025-10-08 for the checkpointstore blob component
- Updates version 0.8.0 from "Unreleased" to released on 2025-10-08 for the main Event Hubs component
- Removes empty changelog sections and consolidates content appropriately
