On GOV.UK (https://www.gov.uk/government/publications/school-centred-initial-teacher-training-scitt-providers-financial-handbook/school-centred-initial-teacher-training-scitt-providers-financial-handbook) this is written as capitals, I know this isn't strictly part of the change, should we use School Centred Initial Teacher Training (SCITT)

I'm going to say yes, we should write it in caps as it is on GOV.UK because this is the name of a specific type of teacher training. Similar principle to talking generally about ministers or specifically about the Minister for Housing.
So it becomes School Centred Initial Teacher Training (SCITT).
