Add support for the Adafruit Matrix Portal ESP32-S3 board.

Unfortunatly I saw the pull request #127 too late and created my own one. Basically this implements the same but with less code changes.
Feel free to use move changes to the other pull request and ignore this one.
I've tested the USB Connection as well as the Wifi UDP connection.

I can also add the resolution 128x32 but I don't have such a panel at the moment. Therefor I cannot test it.
Regarding the README, I was not sure whether the supported boards have a specific order (e.g. alphabetically) so I just added it at the end.

I only have one panel with a resolution of 64x32
That means I only see one half of the images. Which works!
I will add a second profile with 128x32 and update the PR
