adding cat_pack version 6.0.1

There's a new version of cat!

According to the release notes, the changes are minor, but the executable has changed.

It also appears that the owner of cat has transferred the github repository to https://github.com/MGXlab/CAT_pack/tree/master , so I've updated the documentation.

For this Dockerfile

• updated the version arg
• updated base image to jammy
• installs bwa, diamond, and samtools in builder stage
• no longer copies /usr over
• installs cat_pack in app stage
