chore: [2.X] Renovate updates integration

This PR addresses issues raised by Renovate bot in one PR.

1. global.json file was deleted because it wasn't used by CI but was affected by Renovate PRs
2. Renovate settings was changed to not affect testprojects or package
3. minimalprojects dependencies were corrected to be minimal
4. com.unity.multiplayer.tools dependency in testprojects-tools-integration was corrected to not point to github but rather to package version supported in 6000.0

After CI being green and this PR merged I will close all Renovate PRs targetting develop-2.0.0. This follows on #3191
