This points all Rust-built benchmarks to use a recent version of Rust. This requires using the new name for the WASI target: `wasm32-wasip1`.
This updates all Docker images using Emscripten to a recent version.

These changes are meant to fix CI bitrot in the
benchmarks.ymlworkflow. Some Rust-based benchmarks where failing to be rebuilt due to a minimum Rust version requirement (e.g., maybe 1.80?). This change takes the opportunity to also update the Emscripten images.
