Take advantage of the shims.disableAll option added in Kata Containers 3.26.0 to simplify the values files. Instead of explicitly disabling each non-TEE shim with `enabled: false`, we now set `disableAll: true` and only enable the shims we want. Signed-off-by: Fabiano Fidêncio <ffidencio@nvidia.com>
