I noticed that we don't backport docs changes to 9.0 anymore, which makes sense because main is supposed to be the single point of truth.

However, @craigtaverner pointed out that this messes with auto-backports every now and then because those can include docs changes.

This PR entirely syncs the contents of docs/reference/query-languages/esql with main, just so we can continue auto-backporting easily, which will continue to be relevant for a while.

thanks @alex-spies! I've been doing a once-a-week check that no backports were missed to 9.0, obviously there has been more stragglers in the past few days 😄

@alex-spies we should be backporting, even though we're publishing off of main this gives us insurance policy if we ever need to restore version-branch based publishing
