Adds mapping update tests for all allowed combinations of index types.
An index is created, some docs are indexed, mapping is updated to new type, some new docs are indexed, and a search is performed to double check all docs are retrieved.
This could replace 180_update_dense_vector_type.yml YAML test as the newly introduced test has more coverage. Happy to discuss as part of this issue.
