chore(ci): update value yamls, fix artifact paths, and disable unused K8s plugins

Description

• Remove !plugin-name suffix from OCI plugin package definitions across all value YAML files
• Use {{inherit}} for sanity plugin versions instead of hardcoded version strings (except backstage-plugin-scaffolder-backend-module-azure which keeps its explicit version)
• Disable unused plugins on K8s platforms — Tekton, Adoption Insights, and Orchestrator in RBAC K8s diff files; Tekton in AKS/EKS showcase diffs; remove unnecessary Dynamic Home Page and Scorecard disabling from GKE diff
• Fix CI artifact directory paths — use Playwright project names (PW_PROJECT_*) instead of namespace names for common::save_artifact and save_all_pod_logs
