Bugfix for WCS handing non-coordinate inputs/outputs correctly

This PR addresses the bug uncovered in spacetelescope/jwst#10245 (comment) where non-coordinate inputs can induce a failure due to zip strictness.

• Update relevant docstrings and / or docs/ page.
