fix(nginx,compose): mount certbot volumes and use correct LE cert paths

Description:

• add named volumes certbot_conf and certbot_www
• mount volumes in nginx and certbot services
• point nginx to /etc/letsencrypt/live/es.literev.com/{fullchain.pem,privkey.pem,chain.pem}
• set cert mounts read-only and align paths across services
